Keto Pecan Orange Biscotti
Ingredients
11/4 C almond flour
1/2 C pecans (chopped and lightly toasted)
1/4 C granulated erythritol (I use Lakanto sugar)
3/4 tsp aluminum free baking powder
1/8 tsp salt
1 whole egg
1 tsp vanilla
1-2 tsps grand mariner or any other orange flavoured liquor (optional) 1-2 tsps grated orange zest
Directions
- Preheat oven to 350
- Mix all the dry ingredients in one bowl and all the wet ingredients in another bowl.
- Add the wet ingredients to the dry ingredients and blend the two together.
- Form one long log and place in the refrigerator for about 10 minutes. I used a bit of coconut flour on the board when forming the log. It prevents the dough from sticking.
- Bake in the centre of the oven for about 30 min and until golden.
- Remove from the oven and let cool, about 10 min.
- With a serrated knife, slice into 1/2 inch slices and place them back on a baking sheet.
- Cook for about another 15 minutes or so to get the crunch.
