Keto Pecan Orange Biscotti

Ingredients

11/4 C almond flour
1/2 C pecans (chopped and lightly toasted)
1/4 C granulated erythritol (I use Lakanto sugar)
3/4 tsp aluminum free baking powder
1/8 tsp salt
1 whole egg
1 tsp vanilla
1-2 tsps grand mariner or any other orange flavoured liquor (optional) 1-2 tsps grated orange zest

Directions

  1. Preheat oven to 350
  2. Mix all the dry ingredients in one bowl and all the wet ingredients in another bowl.
  3. Add the wet ingredients to the dry ingredients and blend the two together.
  4. Form one long log and place in the refrigerator for about 10 minutes. I used a bit of coconut flour on the board when forming the log. It prevents the dough from sticking.
  5. Bake in the centre of the oven for about 30 min and until golden.
  6. Remove from the oven and let cool, about 10 min.
  7. With a serrated knife, slice into 1/2 inch slices and place them back on a baking sheet.
  8. Cook for about another 15 minutes or so to get the crunch.
