Miso Glazed Salmon

Ingredients

4-5 Salmon Fillets
1/2 C White Miso (the lower salt variety)
3/4 C Mirin
2 tbsp honey
2 tbsp tamari soy
2 tbsp chopped garlic
2 tbsp chopped ginger
1 tsp toasted sesame oi
1 tbsp sesame oi
3 chopped scallions

Directions

Preheat oven to 425 degrees.

Step 1

In a medium sized bowl, combine the miso, mirin, honey, soy sauce, ginger, garlic and sesame oils and set aside. At least one hour before, season the fillets with salt and pepper and place them into the marinade skin side up.

Step 2

Remove fillets from marinade but reserve the liquid. Place fillets on a baking sheet with holes and another underneath to catch any drippings. Make sure fillets are not touching one another. Roast in the oven about a third of the way down from the top. The fish should take about 15 minutes to cook. As it cooks, every so often, with a basting brush, baste the salmon with the marinade. About 5 minutes before it is ready, sprinkle the fillets with the chopped scallion. I like to roast the fish until I get a crispy brown finish to the edges. Serve immediately with miso scented rice or plain basmati rice.
